The ingredients needed to make Pumpkin Sambhar:
- Get 2 big sized pumpkin slice
- Use 1 chopped tomato
- Use 1 chopped onion
- Take Jaggery as per taste
- Use Salt as per taste
- Prepare 1/4 cup tuvar Dal(pigeon pea lentils)
- You need I tsp turmeric powder
- Prepare Water
- Provide For sambhar Masala
- Get 1 cup grated coconut
- Provide 3 tbsp urad Dal
- Prepare 2 tbsp Chana dal
- You need 3 tbsp coriander seeds
- Use 1 tsp cumin seeds
- Provide 1 tsp mustard seeds
- Get 6-7 fenugreek seeds
- You need Tamarind water as per taste
- Provide Red chilli powder or dry red Kashmiri chilli as per taste
- Provide 4 sprigs Curry leaves
- Provide For Tempering
- You need 3 tbsp oil
- Prepare 6-7 garlic cloves
- Prepare 2 sprigs Curry leaves
Instructions to make Pumpkin Sambhar:
- Peel the skin and chop it into big or medium pieces.
- Dry roast ingredients like Urdu Dal, Chana dal, fenugreek seeds, cumin seeds, mustard seeds one by one by with out adding oil and fry urad Dal and channa dal till it turns in to brown colour.
- In pan add oil then add curry leaves and grated coconut in low flame till it turns into brown colour. Then add red chilli powder. Fry for few sec. Let it cool down. Then take all roasted masala ingredients in mixer grinder and add tamarind water.
- Grind in to paste. But it should not be fine paste. Take pressure cooker cook turva Dal to 3 whistle along with turmeric powder, salt and 11/2 cup water. When Dal is cooked mash it and keep aside. In vessel add pumpkin piece, chopped tomato, chopped onion and jaggery,then cook it to soft adding enough water and salt as per taste.
- When pumpkin become soft. Add smashed tuvar Dal to it and mix well. Then add masala paste and boil it for 10 minutes.
- When curry is ready. Give tempering of garlic, mustard seeds and curry leaves. Then pour it to gravy. Mix it well.
- Serve hot gravy with rice.
