- Get 1 onion, chopped (if small use 2)
- Use 1 tomato chopped (if small used two)
- Provide Whole garam - cumin, peppercorn, cloves, cardamom, bayleaf, cinn
- Provide 3-4 garlic pods
- Prepare Inch ginger piece
- Use 1 &2 green chillies
- Use Few cashew
- Prepare Red chilli powder
- Use Turmeric powder
- Provide Salt
- Prepare Garam masala powder
- Use Coriander powder
- Use Oil or ghee
Instructions to make Universal Gravy Masala:
- Mince the ginger garlic and green chilli into paste
- On medium high heat, In a pan, add ghee/oil. Once hot add in whole garam masala and stir fry for a few seconds
- Add in the ginger garlic paste, and stir fry till fragrant. Don't brown.
- Add in chopped onion and stir fry till lightly browned
- Add in tomato and cashew. Stir fry till tomato is soft, and the mixture starts to come together.
- Add in all the masala powders and mix in, allowing to get fragrant. Switch off heat and let cool down.
- Blend the cooled down masala in paste(don't add any water) adjust seasoning.
