The ingredients needed to cook Baingan Bharta:
- Provide 350 grams eggplant or baigan
- Provide 3 tbsp oil
- Use pinch hing
- Use 1 onion chopped
- Use 2 medium tomato chopped
- Use 1 green chilli chopped
- Provide 1 tbsp garlic paste
- Take 1 tbsp ginger paste
- Take 1/4 tbsp haldi powder
- Take 1/4 tbsp red chilli powder
- Provide 1/4 tbsp coriander powder
- Provide 1/4 tbsp garam masala
- Prepare to taste salt
- Prepare 1 tbsp coriander leaves chopped
- Get 2 thin slices of lime
Instructions to make Baingan Bharta:
- Grease the washed baingan with little bit of oil.with the help of fork prick the baingan randomly.cook it on the flame till it's completely done.
- Repeat the process with other baingan as well.Now cover the roasted baingan so that it cools down and becomes easy to handle.Remove the skin of the roasted baingan and mash it well.
- Now take a pan or kadhai.Heat 2 tbsp oil.Add chopped onion and cook for 2 mins.
- Now add the dry spices.red chilli powder,haldi powder,coriander powder,garam masala powder,hing.mix everything and cook for few seconds.
- Add chopped tomato,green chilli and ginger garlic paste.
- Sprinkle salt and cook till tomatoes becomes mushy or till oil seperates.
- Add the roasted and peeled baingan to the tarka.
- Cover and Cook for couple of minutes.srinkle some coriander leaves.
