  2. Prepare 2 cups Maida

  9. Get 1 tsp dhaniya jeera and garam masala powder

Steps to make Lilva Kachori:
  1. Take 2 cups kadia and add 1/2 tsp salt, add 2 tsp oil as required and mix it.
  2. Add water and mix and being to knead the dough.
  3. Cover the dough and let it rest for 30 min.
  4. Add lilva beans in a grinder jar.
  5. Without adding any water grind to a semi coarse paste.
  6. Heat 2 to 3 tsp oil in a frying pan. Add 1/2 tsp jeera and hing.
  7. After 1 min add ginger and garlic paste and cook for some seconds.
  8. Add the coarsely ground lilva beans. Mix it well. Cook for 10 to 15 min on a low flame.
  9. Add all dry masala and cook for 4 to 5 min. After 5 min add cashew, raisins, lemon juice and powder sugar.
  10. Add fresh coriander and mix it well. Let this mixture cool completely.
  11. Knead the dough again and pinch 12 to 13 balls.
  12. Take each dough ball and roll in to a circle having 5 to 6 inches diameter.
  13. Place the stuffing in the centre of the rolled dough and lightly flatten it.
  14. Heat oil for deep frying in a kadai. Keep the flame to a medium low.
  15. Fry 4 to 5 kachoris or more depending on the size of the kadai.
  16. Fry till the crust is crisp and golden.
  17. Keep on kitchen paper towel for extra oil to be absorbed. This way fry all lilva kachoris on a medium - low flame.
  18. Serve with tomato sauce or green and sweet chutney.
