  1. Take 3-4 raw mango (kairi)
  2. Get 1/2 cup jaggery
  3. Take 1/4 tsp mustard seeds
  4. Provide 1/4 tsp fenugreek seeds
  5. Use 1/4 tsp cumin seeds
  6. Get 1/3 tsp sauf
  7. Provide 1/2 tsp turmeric powder
  8. Prepare 1 tsp red chilli powder
  9. Prepare As per taste Salt
  10. Provide As required Oil
  11. Prepare 1 tsp curry leaves
  12. Provide 1 chopped onion
  13. Use 1 tsp crushed ginger garlic
Instructions to make Gud Amba:
  1. First clean and wash raw mangoes. Then peel it and cut it into medium pieces. Heat oil in a pan add mustard seeds, fenugreek seeds, cumin seeds let it crackle now add sauf and curry leaves.
  2. Add chopped onions and sauté for a min or till translucent. Add crushed ginger garlic and sauté for a min.
  3. Now add turmeric powder red chilli powder and stir.
  4. Add mango pieces and mix well. Add little water and cook on a medium flame and cover with the lid.
  5. Cook until kairi becomes tender and soft. At this point add Jaggy and mix well and cook for a min until jaggery gets dissolved.
  6. Switch off the gas flame. Gud Amba is ready to serve. This goes well with poori chapati and rice.
