  1. Boil 1 lt milk.Add juice of 1 lemon in the boiling milk and boil till milk curdles.Let it soak for sometime then strain paneer.Discard all moisture from paneer. Reserve the whey for use in any gravy.Add black pepper,flour,chaat masala,salt and sugar to taste.Also add flour and pinch of garam masala and mash well.Soak chana dal overnight and grind to a paste with minimum water.Add little turmeric, ginger paste,roasted cumin powder,garam masala,chat masala, salt and sugar to taste and mash well.

Heat 1 tbsp oil and fry the chana dal paste with the masalas till dry.Make round balls out of paneer mix.Make a cup shape and fill with a pebble size dal filling.Close the ball and give it an egg like oval shape.Make a slurry of flour and dip the koftas in it and toss in bread crumbs.Dip them again in slurry and coat with breadcrumbs and allow it to set in fridge.
  3. Heat oil in a wok and fry the koftas.Cut from centre and serve with onion rings and sauce or dips of your choice.
