Roast dal lightly.Soak it few minutes.Then pressure cook dal upto 2 whistles with little ghee, salt and turmeric.Set aside for 5 minutes.Chop spinach.Wash properly and drain water completely.Heat ghee in a wok.Sprinkle grated ginger and minced garlic.Toss and add chopped onion.Fry and add tomato.When the tomato is soft,add the chopped spinach.

When the spinach is semi soft and releases water,pour the dal in it and boil.Adjust water accordingly if taken with rice or roti.It can be either thick or a bit more thin.Heat 1 tbsp ghee and sprinkle cumin,dry red chillies and hing.Then add few curry leaves.When they splutter, pour it over the dal and serve hot with rice or any Indian flat bread.
