- Take For Dal Kachori–
- Prepare 1/4 cup urad dal soaked for 2 hours
- You need 2 cups maida
- Get 2 green chillies
- Provide 1/4 " ginger
- Get 1/4 tsp red pepper powder
- You need 2 tsp clarified butter or ghee
- Use to taste salt
- You need as required Oil for frying
- Take For Aloo Kumdha Sabzi–
- You need 200 grams potatoes peeled & cut into 1"
- Provide 200 grams kumdha (yellow pumpkin) peeled & cut into 1"
- Prepare 2 medium onions cut into thin slices
- Get 4 cloves garlic cut into small pieces
- Prepare 1 medium tomato cut into small pieces
- Take 2 green chillies slit into half
- Take 1/2 " ginger cut finely
- Provide 1 tsp red pepper powder
- Get 1/2 tsp haldi powder
- Get 4 tsp dhaniya powder
- You need 1 bay leaf
- Prepare 2 whole red peppers
- Take 2 tsp panchphoran (methi- jeera- rai- saunf-magrella)
- Provide 1/4 tsp hing powder
- Take 1/2 tsp garam masala
- Get to taste salt
- Get 2 & 1/2 cups water
- Provide as required green coriander chopped for garnishing
Steps to make Dal Kachori with Aloo Kumdha Sabzi:
- For–Dal Kachori
- Grind into a fine paste with chillies and ginger.
- Put maida in a big bowl, add ghee, red pepper, salt and mix well.
- Add the dal paste and knead into a semi soft dough.
- Sprinkle little water if required.
- Keep it aside for 15 minutes.
- Mix again lightly and make small balls.
- Roll the balls into thin desired Kachori size with the help of little oil.
- Deep fry in oil on high flame.
- Serve hot
- For Aloo Kumdha Sabzi–
- Heat a big kadhai & add both the oils together.
- Add panchforan, hing, bay leaf, whole red peppers.
- Add green chillies, ginger, garlic, onions, tomatoes and saute for 2 minutes
- Add potatoes and kumdha, saute for 2 minutes
- Add haldi, dhaniya powder, red pepper powder, salt and saute for another 5 minutes on high flame
- Add water, mix well, bring to boil & cover with a lid and cook on slow flame till the vegetables are done
- When cooked check the consistency of the gravy
- Switch off the flame. Sprinkle garam masala and cover with a lid for 5 minutes
- Garnish with chopped coriander
- Serve hot with dal kachori
