- Prepare 1 cup Chana dal (split Bengal gram)
- Prepare 1 tbsp ginger

- Take 1/2 tsp cumin /jeera
- You need 1 whole dried red chilli
- Prepare 1 tbsp ghee
- You need 2 small potatoes cuts into cubes
- Get 1 tsp red chilli powder
- Provide 1 bay leaf/tejpatta
- Provide 2 tsp turmeric powder
- Use 1 tomato cuts into cubes
- Provide 1 cinnamon
- You need 2 cloves
- Provide 1 tsp garam masala
- Take 2 cardamom
- Provide 1/2 tsp coriander paste or powder

Steps to make Dhokar Dalna(no onion,no garlic):
- To make the dhokas/ lentil cakes- In a bowl,soak Chana dal/split bengal gram) in water overnight.Next Day drain away the water.
- Grind the soaked Chana dal/split Bengal gram with the green chillies to make a fine paste(Add very little water if required to make paste).
- In a pan heat mustard oil, add ginger paste, cumin paste or powder, sugar, salt & asafoetida powder / hing powder & fry for a mint.
- Then add the chana dal paste & keep stirring continuously.Let it cook for 5-10 mints till the dal is done & take it off the flame.Don't allow the dal paste to stick to the pan.
- Now grease a plate with little oil & spread this mixture evenly on the plate in the form of a cake & let it cool down properly.
- The mixture takes the form of a solid cake.Then cut the lentil cake carefully into 2 inch squares.
- Heat mustard oil in a pan,slowly slide these 2 inch lentil squares into the pan & fry both sides carefully.
- Fry them in small batches & drain the excess oil over a paper napkin.
- Steps to make the gravy-Heat mustard oil in a pan for tempering.Add cumin seeds, bay leaf,asafoetida,cinnamon,clove, cardamom & dry red chillies.Add potatoes & fry well.
- Now add chopped tomatoes, ginger paste,cumin paste or powder, coriander paste or powder, red chilli powder, salt,sugar & let the gravy cook well on medium flame till the oil separates.
- Then add water & let the potatoes cooked.Add some garam masala powder & ghee into the gravy.
- Finally add the dhokas or lentil cakes slowly into the gravy making sure they do not break.
- Let the gravy simmer for another 5 mints.
- Turn off the flame & garnish the dish in a serving plate with coriander leaves.
- Serve it hot with steam rice or phulkas.
