- Get 400 gms Mutton
- Get 2 tbsp Oil
- Prepare 1 tsp Cumin seeds
- You need 1 medium Cinnamon stick
- You need 3 green Cardamom

- Get 1 bay leaf
- Get 1 Large onion chopped
- You need 1 Large tomato chopped
- Get 3 dry red chillies
- Prepare 2 tsp Ginger Garlic paste
- Prepare 1 tsp turmeric powder
- You need 1/2 tsp roasted cumin powder
- Use 1 tsp roasted coriander powder
- Provide 1 tsp roasted fennel powder
- Use 1 tsp red chilli powder
- Get 1 tsp Garam Masala powder
- Take 1 tsp Pepper powder
- Get 1 sprig Curry leaves
- Prepare to taste Salt
- Provide as needed Water
- Use as needed Few Coriander leaves chopped
Steps to make Mutton Chukka:
- In a pan heat the oil. Add in the cumin seeds, cinnamon, cardamom, cloves, bay leaf and let it crackle.
- Add in onion, dry chillies, ginger garlic paste, curry leaves and saute for 2 mins
- Add mutton, salt to taste and mix well
- Cover the pan and cook in medium heat for 10-15 mins stirring it occasionally till the water released by mutton evaporates.
- Add chopped tomatoes and cook till it turns mushy.
- Add the turmeric powder, cumin powder, fennel powder, coriander powder, garam masala powder, red chilli powder, pepper powder, mix well and cook for a min.
- Add required water, cover the pan and cook in medium heat till the mutton is cooked completely. Mine took 40-45 mins. Cooking time will differ depending upon the tenderness of your meat. Add water little at a time and cook till the meat is tender and cooked completely.
- Add chopped coriander leaves, cook for a mins or two in high heat and take off the heat.
- Enjoy as a side dish.
